I have been researching sous vide cooking for a while and have been wanting to give it a try. Bought and immersion heat circulator today. Anyone have any suggestions? Advice? Good recipes?

I've got one. Not super impressed, but it is great for marinated meats.
Usually very tender, but sometimes I like a little pull on the bone.

Getting a good sear after cooking is critical.

Thick ribeye. Salt and pepper, 130 degrees or so for 2 hours. Take out of vacuum bags and pat dry. Throw on grill (very hot) for a couple minutes each side to get a bit of a crust.

My brother in law (who posts on this site so he may see this and chime in) bought one last year and raves about it. Just last week he sent us pictures of a steak he made using it.
