You probably had Pot Still. They don't actually give tasters of their high-priced gift shop bottles, unfortunately.
The gift shop releases are pretty rare, single barrel, and aged from 9 to 26 years. And they aren't cheap!
For other good bourbon, Elmer T. Lee, Weller 12 year, Weller 90 proof, Colonel EH Taylor's Barrel Proof and Single Barrel releases, and any of the Booker's, you can't go wrong. On the cheap, Corner Creek is a nice, mellow sipper.
Going outside of KY, Smooth Ambler's 9+ year bottlings are usually pretty good, as are the Bowman series. And if you venture into Tennessee whiskey, the barrel proof Jack Daniels was quite the surprise (and I don't like regular Jack, so that tells you something!).
