Any recommendations?

I haven't been to Cumberland Falls or Yahoo Falls in McCreary in many years, so I think I'll hit them both up this summer. I'll definitely hike the Pinnacles in Berea at least a couple of times.

They've got a nice trail up the mountain down in Berea. Can't remember the name of it

The Pinnacles, Berea...sucker is usually crowded but you can get like around 10 miles doing the whole thing, and not that many people hike back to eagles nest, and the other lookout far back there. It’s worth it.

Big South Fork is a little out of range but some nice hiking. Auxier Ridge loop at the Gorge is hard to beat.
Auxier Ridge is what got me into the outdoors. When I was at UK a buddy invited me to go and I just remember sitting on one of the vantage points, smoking a joint without a care in the world.

I ended up backpacking a good deal of the trails in the Gorge before moving out to Colorado. Always enjoyed staying the night on top of CloudSplitter and watching the sunset and sunrise.

Well you answered your own question as Cumberland Falls and The Pinnacles are the two best in central KY IMO.

I'd do a day trip to The Pinnacles but I'd definitely camp out down at Cumberland Falls and take a couple days down there. That money shot overlooking Cumberland Falls on the Eagle Falls trail is the most scenic view in KY IMO.
