Count your blessings if you're not in a line of work wherein you debate what HEIGHTS things should be, non-stop.

It's gotten to the point that it's keeping me up at night, obviously.

Coolth is, though. And nobody ever uses it. In fact, I bet if you went into a college lecture hall and started using the word coolth, 75% of the students would think you were an idiot.

I thought you got out of architecture.

Picture and pitcher are not pronounced the same.
Words ending with "ist" are not plurals.
Adding 's to the end of a word also does not make it plural.

Saying "heighth" is just an old southern way of saying height. It's the same way someone says "oral" instead of "oil" or mispronounces Cincinnati or Missouri as Cincinnat-uh or Mizzour-uh. It's not meant to be a new word, just a mispronunciation of an existing word.

My folks mispronounce oil and boil. They definitely don't pronounce it oral though. They just leave out the I. They also say battree, cumpnee, and light bub. How about sim-you-ler instead of similar?
