Weekend afternoons are the worst. Evenings are noticeably better.
Yeah, a Saturday at noon-ish probably the busiest time to go. I would like to have given the brisket a shot, just to see. But it was an awkward time how much longer we had to drive and when we wanted to have the kids eat and all that.

I did like the ethanol free gas option.

They are ok. Maybe fantastic if you're a ketchup based guy / gal.
I love the SC mustard based sauce, but I’m not sure I’d love it with brisket. Not sure I’ve ever see it. That said, I’ve tended to prefer my BBQ without sauce lately. I really just want to get the smoke flavor from the meat as much as I can.

I'm with you. Very light ketchup base or none at all would be my preference on Brisket (if they don't offer mustard base).

I make my brisket at home with mustard base. Very good. That said, I put mustard on everything. I use honey mustard on egg salad, chicken salad, potatoes, beef or pork roast, any chicken etc. My wife thinks it's gross but that's the way I roll.

What kind of smoker you use? I've never done any smoking but thinking about dipping my toe in the water one of these days.

Not a big smoker. My time is very limited. I am the wrong guy to ask but have been contemplating an egg. Just haven't pulled the trigger.

I'd love to give it a shot, but I don't know if I could handle the inevitable failure. I know nobody's first few smokes go well and I'm not sure I have the patience to work out the details.

I've only been smoking for a couple of years, but I started with an electric smoker (Masterbuilt) which has made it much easier to jump into. The only thing I still haven't done is get a small butane torch to be able to light the pellets in the tray accessory I bought, and that way I don't have to keep feeding/reloading wood chips every hour. With an electric smoker you can typically set it and forget it, and they are relatively inexpensive compared to bigger, more advanced smokers in the pellet categories.

Recommend you reconsider & enjoy the process.
I've only been smoking for a couple of years, but I started with an electric smoker (Masterbuilt) which has made it much easier to jump into. I guess one thing holding me back is that if I want to do it, I feel like I need to go all the way with a regular wood smoker. But that's such an intricate process balancing everything with temp, oxygen and all that to keep things just right. The electric pellet would be easier, but I know meat smoking enthusiasts look down on the pellet and electric smokers. But, at the end of the day, if the meat turns out great, who cares how you got there?

That is correct, what matters is the end result no matter how you got there. I also thought the same way in terms of what I was using, but figured if I wanted to get started without a lot of failure then the easier the better, and if I really like it then later on I could get into more advanced methods. That's a good thought. Might take a look at some pellet smokers to ease my way into the hobby.
