I hope you're not coming early in the week. We're expecting a crapload of traffic on I-15 coming north to Idaho for the eclipse and then going back south after it's over. Maybe the predictions are overblown, maybe not.
SLC is nice if it's a low smog day. No humidity. Lot's of sun. Lot's of good food. I live 2 hours north in Idaho so I can't really tell you much about what to do there though.

Bars and restaurants that sell alcohol are a completely different world than what you're used to.
Don't be surprised if you 1) are forced to buy a meal with your beer 2) can only get 4% beer on tap 3) can't get a full pint of "strong beer"
Temple square area is neat. That's about all I have. Not a big fan of Salt Lake City. Flying into the airport is neat, though; great view
