What's everyone cooking during the Winter months? I figure some people might still be grilling/smoking, but not me. Today (and many days) it's in the teens with wind chills down to the negatives. So the grill is put away and no outdoor cooking until April.

I got Lazy Man Stew in the crock pot now. Got a pretty good recipe for a Cast-iron egg bake with Chorizo, spinach and pepper-jack thats a solid brunch item.

My go to is homemade chili I call the 22-22 Chili. It has two types of meat, two types of beer, two types of beans, and two types of Tomatoes w/chilis. I've never made it the same way twice I don't think. Still working on the name lol. Makes people blow their pants apart.

please post the chili recipe

Absolutely.

I am going to leave out my own chili powder, some things need to remain a secret. I actually started with a recipe from Men's Health about a decade ago, and have since tweaked it a bunch of times.

--Heat 2 tablespoons of Olive Oil in large stock pot or dutch oven.
--Add 2 diced Large Yellow onions and 3 minced garlic cloves for 5 min until starting to brown.
--Add 2 lbs of ground meat. I've used 70/80/93% in combination and also pork and turkey. Brown the meat. 5 to 10 min.
--Add two table spoons of chili powder, 2 cans of tomatoes w/chilis (regular, hot, mild), 1 can of tomato paste and 12 ounces of beer. Stir for a few min.
--add two 15oz cans of beans (Kidney and Black work best, but others work), and another 8 ounces of beer. Simmer for 2-3 hours.

I switch up the beers.. Stouts, lagers, IPAs, even used a Pumpkin beer, but i didn't taste it much. I think the beer just makes it heartier. I try and do 2 different of each. So it's never the 2 same beers or 2 of the same meat. But the recipe is indeed, that simple.

(note: I'm gonna make sure the recipe is right, so I may edit this again, but I;ve done it so many times Im pretty sure everything is as it should be).

nice. My recipe for chili is pretty much " go to the grocery and buy what seems like the right amount, and then dump it in a pot".

That's more or less what this is lol. It's super easy, and it's hard to mess up, mainly because everything just cooks itself for those 2-3 hours. Makes probably 6-8 servings. Good for leftovers and perfect for gameday.

Throw together some buns and wieners and you got chili dogs.. a perfect way to find yourself sleeping on the couch!

Steak Chimichurri

6 large garlic cloves
2 shallots (could use 1/4 medium onion)
2 cups fresh parsley
1/4 cup dried oregano leaves
1 tablespoon salt
1 teaspoon red pepper flakes
1 cup extra virgin olive oil
1/2 cup red wine vinegar

Combine all ingredients into a blender or food processor. Pulse until desired consistency. We like ours a little chunky.

Our steak of choice is ribeye. But if they aren’t on sale, sirloin or flank works just fine.

Now you can take some of the sauce and either marinade your steaks in a sealed zip bag. Overnight if you can, then grill and serve the rest on the side. Downside if using charcoal is the marinade will drip into the coals.

We typically don’t go the overnight marinade route. We season the steaks with kosher salt and fresh cracked black pepper before grilling. We serve the sauce on the side and let folks spoon out what they want on their steak.

Works great with chicken and pork chops too.

I got a few more recipes to dig up later. Here's my take on chili:

CHILI​

2 tablespoons butter

3 tablespoons bacon grease

1 red bell peppers

1 green pepper

2 jalapenos, minced (about 2 tablespoons)

1 large yellow onion

4 cloves garlic

2 pounds ground beef

1 pound bulk Italian sausage (I use hot)

½ package bacon

4 tablespoons chili powder

2 teaspoons smoked paprika

2 teaspoons ground cumin

2 teaspoons cayenne pepper

2 teaspoons kosher salt

2 teaspoons freshly ground black pepper

2 cups tomato sauce

1 cup tomato paste

8 ounces lager beer

1 cup chicken stock

1 (15.5-ounce) cans red kidney beans

1 (15.5-ounce) cans dark red kidney beans

1 tablespoon Worcestershire sauce

Brown the meat and sausage, while that's going dice up all the veggies. Stick it all in the crock pot, dutch oven or large pot over med. high heat for at least 4 hours.

Taking a shot at some Char Sui pork today. Since the virus hit I’ve been trying to make one big dinner a week and really focus on technique. I’d like to try to make Peking Duck, anybody ever cook one? Ossobuco is another winter jam.

Typing this out is helping me realize why I am fat now.

I’ve got a pot of beef stroganoff going now. Will whip up some mashed potatoes and homemade bread. Nice hearty meal on a cold night.

Shallots are not traditional in chimichuri but I agree that they are a nice addition. The recipe I use is very similar to yours. I like it on strip steak.

Vegetable soup. Tomato sauce, corn, peas, beef chunks, macaroni noodles and potatoes. Can’t beat it.

I made a pot of chili a few days ago.....ground beef, hot pork sausage and cubed duck breast....black beans, red kidney, and white kidneys..........couple quarts of tomatoes, some onion, green pepper.......I don't even remember the spices beyond chili power...I never make anything from recipe.....it is different every time I cook.......

My college roommate would insist on calling it "Beef stroke-me-off" and I've never been able to call it anything different.
