I have Shun knives and have been buying Wustof knives for my daughter as gifts over the years to build her collection.
I think as others have alluded to. The Japanese knives are awesome, however, they do feel more delicate than the German blades.
If you are not ham-handed with the Japanese knives they should last a lifetime with no issues.
I think the German knives are probably better for most general use-type situations as they seem tougher.
In my younger fish-fry, BBQ, and drinking type days. The German knives would have suited me better. lol
I love my Shuns, but I would not turn my buddies loose on them. I damn sure would not have taken them to the garage on "opening day" for drinking, skinning, and cooking all sorts of critter.
