We’re frying up a big batch of rabbit tonight to kick off squirrel season. Having a mix of farm raised and wild rabbit. Never had it as jerky but I think I’ll give it a shot.The best jerky I ever ate was rabbit. A friend raised meat rabbits and would make jerky when he processed a bunch. It's not tough or stringy and worked great with every recipe he tried.
