created a dish or recipe, rather than just followed another’s recipe, that you would make or share with others without reservation or that you make all the time because you think it is awesome?

if so, would you share?

Sure I kind of made my own way with chili, lasagna, meatloaf, and several other dishes. Just put stuff in I thought would be interesting.

One of the better meatloaf's I made was ground veal, ground beef, beer cheese, crushed Fritos, onions, red peppers, and bacon.

CC, our family has never mixed up the recipes that were handed down. That’s everything from boudin to seafood to everything I can think of . Not even the grits, it’s been that way for at least 100 years no joke 🍺

Nothing crazy. I tweaked my grandmother's corn pudding recipe for the holidays and everyone loves it. Grandma just needed to add more corn.

Other than that a big mistake I see often is folks baking chicken on 350°....bad idea. Bake chicken at 475°....cooks faster and holds the moisture better. Brining is a nice touch too.

Last thing....re-heating burgers (assuming no cheese added)...boiling a pot of water and dropping burger in is the only way to go.

I recreated through trial and error a restaurant recipe of a grilled chicken breast with ham and melted provolone smothered in a Dijon cream sauce. As a teen in the 80's, this was my favorite dish. Here is someone else trying to recreate the same recipe.. I prefer my version.

Drop or two of truffle oil in your burger mix. Not too much at all or it will dominate the flavor of the meat.

-that meatloaf sounds really good.

-rarely do recipes anymore...will reference for cook time occasionally. My favorite way to cook is "what's in the pantry/ill make it work"...I recommend this book for that endeavor:

-of course you need a pretty good grasp of how to cook/kitchen skills...but that method never fails.

Roast squash, zucchini, mushrooms, onions, and garlic cloves drizzled in olive oil.

over spaghetti noodles put a few spoonfuls of bruschetta sauce from a jar or a sun dried tomato pesto. Add parm and bleu cheese crumbles, smoked salmon crumbles, and the roasted veggies on top. Serve with wine.
