What is your best?

Mine is something like this.
4-5 tomatoes
1/2 large White onion
Serrano and or Habanero at much as you like
1 stalk of cilantro
1 squeezed lime
4-5 large Pieces of a garlic bulb
salt pepper to taste

I boil the tomatoes, onion, peppers and garlic to get them a little soft, put them in a blender and only blend long enough to make some edible chunks.

If I start sweating then I know it is good.

I just read that 10% of the population has genetic mutation that makes cilantro taste like soap.......I thought that was interesting and explains why some folks can't stand it

Same thing with Belgian yeast. It tastes like metallic **** to some people.

Don't boil the tomatoes, onion, peppers and garlic - put them over live coals (wood or chunk charcoal, not briquettes) and roast them up. That will create much more depth of flavor in your finished product than boiling can provide. Just give them a bit of char to help bring out the sugars and flavor.

3 large cans whole peeled tomatoes

1 medium yellow onion
4 garlic cloves
2 jalapeno peppers
3 teaspoons cumin
3 teaspoons garlic salt
3 teaspoons sugar
some lime juice

I don't measure the spices, just add about the amount above by eyeballing it

Put in ninja blender and mix

Feel free to share it here. I don't even follow a recipe anymore, so I couldn't exactly share it. It's not my original (though does have some personal tweaks), so sharing it is fine.

It is damn good!
