will the networks save if both the ACC and PAC-12 go bust? I mean, it's not like the networks are going to beat down the door to sweeten the existing TV deals..... or will they?

Well there is no deal (after this season) for the PAC 4 and the ACC is set in stone for now. With FSU looking for a way out, ESPN is just letting things happen. They have an interest in getting FSU added to either the B1G or SEC to add more “must see games” to their schedule.
There was talk that 8 ACC schools might vote to disband the conference with corporate sponsors, but unless it would be long term, I don’t see a corporation investing in a short term deal and the schools jump to another conference before they get a return on their investment. I’m sure that there is talks between schools that they go behind closed doors and secure a landing place and vote to disband. That would be the only way I see them getting out.

ACC is the deal of the century for ESPN. They bullied them into not negotiating and locking themselves into a way too long deal, while a comparable conference with a smaller footprint smoked them per school by boxing networks against each other. ESPN would love it if they played out the entire deal as is. The PAC on the other hand, who knows but that was also a cheap deal.
