Kook, I've been wanting to try sous vide ribs for a while....how do you finish them off? Just a grill / glaze or do you have any other black magic tips?

Headed down to the sponge docks to pick up about 10 pounds of Gulf jumbo shrimp right off of the boat.

I will put some corn on the grill, leaving the husks on and make some swamp cabbage. Will make some gumbo, grill some and fry a few. For those who do not like seafood I will have ribs, steaks and a few other things. .

False. Not having to cook for over 40 people this time.

I'm smoking a couple of chickens and smoke roasting a tri tip on Sunday.

I'm making trailer park dogs on Monday. Ripping off the recipe from Senate.

Assemble in order: buttered toasted bun + all beef hotdog + american cheese + bacon + cole slaw + crushed Grippo's potato chips

This method is money.

Grill/egg to finish on direct heat. Cherry smoke. Try to get a legit sticky bark. Plowboys Yardbird rub.

I use apple jelly, brown sugar, butter, and honey also to braze finish.

Waiting for THAT person to list the always boring Boston Butt. Having said that, I am going fairly basic myself all the way down to burgers and dogs for the kiddies.

Snack foods
Chorizo
Chicken wings
Kielbasa


Adults
St. Louis style ribs
Pork tenderloin stuffed with Apricot jam

Younger crowd
Country Bob Burgers
Nathans hot dogs stuffed with string provolone


Mostly family and a few SELECT friends. TV on the deck on mute with Indy 500 and Nascar as back ground. Outdoor speakers blaring 80's / 90's / 00's tunes poolside. Cornhole and pool basketball to past the time.

To me, Memorial Day weekend (holidays, birthday grillings, etc.) is for basic cooking. I like doing filets or any nice steak for that matter for more "nice dinner" type grillings. Big crowd, holiday weekends; ribs, loin, burgers and brats and the such are perfect for holiday gathering type cooks. I do not like having to really "man" the grill for finer dining on holidays. Throw stuff on, go swim, drink, entertain and come back to check on food. Ribs and loins are perfect for that type situation.

Burgers tonight.

Smoking a Boston Butt tomorrow.

Picnic style fried chicken on Sunday.

Invited for a cookout at the in-laws on Monday so I don't know what that is.

* I have no desire to babysit a more expensive cut of meat or prep for anything longer than 30 minutes. Too much to do and enjoy this weekend!

Does anyone else know someone that has a phobia about meat with bones in it? I have a friend that will absolutley not eat anything that has a bone. No fried chicken. I messed up one time and bought rib eyes and his wife had to cut the bone out before it could go on his plate.

Exactly what we’re planning.

2019 has been an exhausting year so far, and I’m just looking to recharge the battery a bit this weekend. The closest thing we’ll get to indoor cooking will be cutting up a salad and tossing some baked potatoes in the oven to go with the ribeyes. For the brats and sausages it’ll be chips and a can of baked beans.

Grilled a couple of 1 1/2" bone in chops & a bundle of asparagus, on my plain old Weber Kettle, while sipping some Makers and burning a few heaters. It was fabulous

Ended up doing ribs yesterday, instead of ribeyes.My smoker is currently out of commission. So I wrapped in foil and baked in the oven at 250 degrees for a while. Then threw them on the grill to finish them off and add a bit of smoke and char.

They were very good, but still could’ve been better. Should have given them another 30-60 minutes of low and slow before throwing on the grill. But it was getting late because we spent too much time in the pool and my family was getting impatient/“hangry”.

I smoked some ribs, brats, and a pork roast. All came out pretty tasty, but I was also pretty far into the alcohol at that point, so that may have played a factor. haha
