I thought he was a redshirt senior, and just completed his final year, after redshirting this year and is the Senior Bowl.

He did not play in 2020 so he did not have another year, why would he have to declare?

Article I read stated we would be "without one of our top defenders" next year, seeming to imply he had eligibility, but I have no clue on the time lines.

Well that is true, he ran out of elgibility, so he would not play next year and the team will be without him.

When you say "Declare" I think of a player that opted for the NFL draft over coming back for another season. But given covid years its hard to keep track but looks like Nick is actually out of elgibility.
