Pork Tenderloin, spatchcock chicken and flat iron or flank are really the easiest cooks and they just produce unreal food. I might do some wings this weekend. Actually smoke them rather than raised direct.

Love smoked wings. Flash fry them for a few minutes right before tossing them and they are perfect.

The first night of a butt is great, the next day when I see it in the fridge I get smokers remorse. The outside cats have eaten a lot of pork.

That's what we give Boat so much grief over. First of all he just brings in a flimsy aluminum foil tray and flops down a whole butt that leaks all over the counter. Then it sits around all day stinking up the house. Gotta throw that stuff. I don't think it's worth saving.

When it's just for me and my wife I look for the smallest butt I can find. Cuts down on cooking time and leftovers.

Neither of us want sauce on the meat the first day, but after that I'll scour the web for regional sauces to try out. I've got a better stock of vinegar than I do of bourbon now.

There is a 3 pound chuck roast rubbed and wrapped in the fridge that I'm cooking later. There will be no leftovers for tomorrow.

By the time I am done smoking a pork butt, I don't even want to eat it. I just give it away.

My parents take the leftovers and stick it in a crockpot full of bbq sauce and simmer all day.
