So I caught some fish yesterday

They were very nice size and today I am smoking the fillets. I'm good to go as they are start to bronze up right now and I have done this many time before but I just wondered if anybody else likes to smoke their fish. If so do you have any great marinades. I simply start with sugar and salt then throw in stuff I have on hand for taste.

What I do is take a little brown sugar and squeeze out some fresh apricot and mix it all together. Next, I'll take a small brush and lather up each side of each fish. And then I'll take a picture of two grown men kissing and I'll rub the picture all over the fish before putting them on the fryer just cuz I'm superstitious. Then I'll think nothing but happy thoughts while the fishies are cooking until their nice and crispy. It's sooo good!

Nice size are some of the best fish for smoking. Stay away from too small or too large. I had some just rights last week and they were very satisfying.

Dales. Its a soy sauce blend. I used it to marinate fish before I put them in the dehydrater to make fish jerky too.

I've had Dales on hand before and I remember liking it. The fish were so good I had eaten all of it before company arrived.
