Tuna Salad help

I know we've done this before but I'm looking for a can of tuna that actually tastes good. I've tried about all of them lately and most are just mushy slop. Anyone have a go to brand for tuna salad? Also, has anyone tried making tuna salad by starting with fresh tuna? If so, how did it turn out?

Years ago (many years) while working at a local deli. I learned a trick that deli’s use when making tuna salad. They add bread crumbs. Bread crumbs soak up any extra liquid so you don’t have that little puddle around the tuna salad after it settles. It also gives it more weight so when you buy the sandwich it feels heavier giving the illusion your getting more for your money. But, for me, the most important aspect is the way it changes the taste and consistency. Bread crumbs seem to make the flavor less sharp more creamy. They make the texture more spreadable. Which I prefer. No big chunks of tuna! I prefer it and have always added some bread crumbs whenever I make tuna salad. Also, I always always use Hellman’s Mayo, give it a little squirt of mustard, chopped celery and onion, salt and lots of fresh ground black pepper. Enjoy!

starkist white packed in water but you need to get it in the 4 packs for some odd reason the loose ones are always musy but the 4 pack ones are rock solid.

I think the biggest key to a good tuna salad it to make sure that you mash and mix the tuna until it is in very fine pieces. I typically get light chunk tuna in water and mash the hell out of it before I start adding anything to it. Unless you buy high end canned tuna in olive oil, it is going to be dry. Leaving it in big chunks only emphasizes the dryness. I think high end canned tuna or fresh tuna would be wasted in a tuna salad.

Using canned mackerel instead of tuna makes a good tuna salad alternative. If you’re tired of the mayo based salad, try mixing tuna, salmon, or mackerel into hummus instead. Tzatziki is another way to go instead of the usual mayo. If you’re making a big batch of tuna salad, try mixing in a little bit of canned sardines, kippered herring, or smoked trout into your regular tuna salad for a more varied taste. I’ve been trying to increase my tinned fish intake beyond just tuna. Sardines, herring, and mackerel are typically better for you to eat on a regular basis because they have lower levels of mercury. Used to love sardines as a kid but stopped eating them for some reason or another. It’s taking me a while to get used to them again as they do have a much stronger flavor than canned tuna.
