Switch to Extra Virgin Olive Oil on veggies and roast them in the oven at low temp(300-325) with salt and pepper. Makes veggies taste better. Broccoli, Cauliflower, Carrots, Brussell Sprouts, Asparagus, etc.
When we do use butter. It is only Kerrygold.

There’s a definite difference with Irish butter.
Be sure to read the Olive Oil labels. If it is a mix of many diff countries it probably doesn't taste that great and they may have chemicals. Be sure it is just from 1 country like Italy.

My grandmother used to call margarine oleo.
I don’t remember her actually *saying* the word. But she’d hang on to used margarine containers to put leftovers in. And then the container that actually had margarine in it she’d put masking tape on and write oleo on the masking tape. I remember thinking “WTF is oleo,” sounds like it might be a dessert, opening up the container, and learning, oh, oleo = margarine.My grandmother used to call margarine oleo.
