Doing a little research, it's possible to find interesting candidates (as opposed to old retreads that coach on the offensive side of the ball) working for schools in which State would be a pretty obvious step up in terms of prestige and money. I think these are three interesting candidates that I would want to talk to if I were Mullen. Of course, if I were Mullen my contact list would be full of good d-coordinators to call.

Tim Banks - Central Michigan, DC - 15th ranked D in the country in 2009, very young (coached at UCM and Maryland - never coached in the south)

Hudson has more experience at a higher level, but both look like they would be eager to make a name for themselves in the "all defense all the time" league of the SEC.

I think Hudson would be a very good choice. Tim Banks from Central Michigan has an impressive resume for a young guy.

Diaz seems good , but I think I'd take Hudson or Banks over him.

I'm not saying he's the man for the job just saying he might be someone to look at as a possibility. I know he has been mentioned on this board before and I think the only reason he was fired was to save Mark Richt's ***. He has never had a defense ranked under 30th in the nation. He's in his late forties, not too young and not too old. He's a great secondary coach and has sent a long list of dbs to the nfl. I know many here would see him as just a Georgia scrub(and he may be) but he has had some really good defenses at Georigia and was just a part of a Mark Richt's final attempt to save his job(see Jackie's last years).
