A little OT: 11:21 kicks kill my tailgate catering business

And I completely understand why. Do any of y'all have any ideas on how to improve business with these fantastic kick times? Breakfast menu?

Breakfast menu. Breakfast casseroles. Sausage & biscuits.

I would think there ought to be more demand for breakfast at early kickoffs than there is for dinner food at late kickoffs. You'd think people are less motivated to make or bring their own food for 8am arrivals on campus.

We had some GREAT tailgating after (and during the second half) of the TAMU game. Maybe you could offer a post-game package or something for early kicks.

This. I'd order a tray of waffles with various items to put on them including fried chicken strips. Casseroles would also be nice. Post-game delivery of more substantive food would also be huge.

I'm probably not the person to weigh in on this since distance keeps me from making many games, but do you/can you offer second-half or post-game delivery? Or at least offer a pickup site walking distance to the tailgates? The tailgate I was at Saturday had food brought in after the game, so whoever had their business basically got extra business because of the kick-off time. Probably half the normal spread for breakfast since a lot of people didn't spend much time at the tailgate before the game, but then the normal spread for after the game.

It seems like there would be plenty of people wanting to hang out after an 11am game, eat, and watch tv (or at least there would be after 11am games where we don't **** the bed). But I think offering a way to get it to the tailgate sometime in the second half is key; I don't think people want to pick up lunch food before the game and have it sit at the tailgate for 5 hours before they break into it. If you offer second half delivery and people aren't taking advantage of it, then I'm stumped.

Let me suggest this. If you were to offer post game service, arrive with the correct items that were ordered, and actually show up within a couple hours of the time that had been set, you'd beat our university dining services. They completely blew it for our tent this past weekend, and it was beyond ridiculous.

If I tailgated more than once per season, I'd definitely try to use your service...

If you're looking to bring something new into the breakfast item market, take a look at making kolaches. Kind of like pigs in a blanket, but with much more diversity inside the blanket.

Post game delivery - say 30 minutes after end of game.
Limit the menu but make it good.

I worked at sweet peppers for a while and they had a decent breakfast catering menu that consisted of fresh cut fruit, baked pastries, biscuits, bacon and sausage. Me personally a sausage biscuit and a bud light is a good pick me upper at 8:30 in the morning before I trek to the student section.

Breakfast casseroles are a great idea for a tailgate and would be pretty easy for you to make in bulk. In fact, you could cook them in your smoker for a nice little twist.
