Anybody got a good potato salad recipe?

I did notice today that Aldi has both mustard based and “steakhouse” potato salad. So there are at least 3 places he can pick some up.

My wife uses a Paula Dean recipe. Has 5lbs red potatoes ( boiled with skin on) and pack of bacon, and 6 boiled eggs, 2 tbls dejon mustard, 1.5 cups mayonnaise. Bacon drippings in the water with the taters.

Whenever I make potato salad, I always use Virginia potatoes. The best kind of Virginia potato is a variety called Superiors. That also seems to describe the attitude of the Virginia faithful.

Fun fact: VIrginia is #10 in the country in potato production. Mustard based is the way to go. Don't give me that Red Hot and Blue mayonnaise crap potato salad.

The good news is it’s hard to screw it up & it’s easy. I cut up some baby reds & boil them the water with a tablespoon of salt for about 10 minutes. Combine with a hard boiled egg or 2, mayo & mustard (just use what looks right), a teaspoon of black pepper , half teaspoon garlic & paprika, 1/4 teaspoon cayenne pepper, some lime juice (or pickle relish ) & you’re done.

Red Hot & Blue still exists? I can’t even remember their potato salad. I do remember the one in Jackson had a picture of the 3 neon pigs from the Hut BBQ place right around the corner from my grandparents in Jackson TN when I was a kid. So that was pretty cool for me.

Not sure but the one in Jackson closed a decade ago at least. It's now Margaritas that's been in the news lately , I think.

Their potato salad had big chunks of potato with the skin still on lathered in mayonnaise. A lot of people liked it. I did not.

It’s been more like 30 years since the one in Jackson closed. And yeah, it was the now infamous Margaritas location. It was good BBQ too, regardless of the potato salad.

5 pounds red potatoes
1 bell pepper finely chopped
1 onion finely chopped
1 large jar pimientos chopped
3/4 quart of Blue Plate mayo
7 teaspoons yellow mustard
Salt and pepper

boil potatoes with skin on and peel under running water
Sweat the vegetables until tender
Mix all ingredients together to a somewhat creamy consistency close to mashed potatoes
Chill to let flavors combine

As one of only three people in recorded history who have lived in Virginia, Mississippi, and Idaho.... I can assure you Mississippi and Virginia are in equal footing when it comes to potato bandwidth.

And if you're not putting lobster or andouille sausage in your tater salad, you are missing out...
