Buffalo Trace has always been my pick for "entry" or "low-end", based on price.

..but in the last few months that stuff has sky-rocketed and it's even getting tough to find in the Upstate New York area. Any ideas why?

Low production. When the bourbon market was down they stopped producing as much.
