A little late, but the Master's app was the best app ever, and it was free. If you have Directv, they have an app for scheduling your DVR. Flixster is pretty handy if you like movies. And then there is the free Pandora Internet radio app.
Air Sharing, Local Eats, The Weather Channel, Where, Eventful, Kayak (finds hotel rooms and airline tix), Snaptell, Shazam, Now Playing,GasBag, WCA (wakeup call), and Carpenter
get a facebook/myspace/twitter app. i also like iheartradio, shazam, sol free, sportacular, and lux touch(basically a free version of Risk).
Cardstar is probably my favorite. Nothing better than having all of your rewards cards or membership cards that have a upc on your phone instead of taking up space in your wallet or on your keychain. plus it's more secure. always trips out the cashiers at kroger too, "whoa does that really work?" hard to use in the self-checkout for some reason, but I have gotten it to work there.
Yahoo(!) oneConnect and their new mobile home page (new.m.yahoo.com) can do all the social networking sites at once. Also, lifehacker has lots of posts about cool apps. Evernote is pretty cool, but it would be way more useful with a phone instead of a touch.
It will allow you to quickly view SPS topics to see if its worth logging into and will feature a Best SPS Farks gallery as well as minigames Punch Peaches and Croomopoly.
vlingo- update facebook status, find a phone number, search an address, google something all by the sound of your voice.
gigotron-find what bands are playing where in your area on a particular night.
midomi-like shazaam but you can hum or sing the song yourself if you want.
