As many of you already are aware i have begun catering cajun food from my restaurant to msu tailgate parties. We have had some decent success so far and hope this upcoming game will be better.
So here is my dilemma: we are a man down in the kitchen and the floor, plus we have a charity event that weekend. So my wife wont let me justify simply going to the game. She says "its business." So, if i get enough catering i can justify by "its business."
Game on sixpack!

You ever thought about doing some kind of food truck or tent that just sells plate lunches during the tailgating hours at the Junction? Maybe it's just me, but I feel like it would be pretty popular during Fall months, and it would give you a built in excuse to be there every gameday weekend rather than having to wait on catering orders.

The school might have a problem, but I bet the Comfort Suites could be bribed pretty easily.

It probably would still suck getting necessary permits on short notice. I'm willing to bet the city isn't to swift on such matters.

Food trucks usually require a special permit. Since they're selling food and all. It's gotten to be a bid deal around here with the growing popularity of food trucks setting up outside bars.

That 11am kickoff really is a deal killer

I would buy a platter of whatever you had but I'm not sure if my group would want to stuff their faces that early.

We tailgate after our game is over when we draw the early slot. Great atmosphere to watch the remainder of the games.

Chicken n sausage jambalaya
Red beans n rice
Peach bread puddin with brown sugar whiskey sauce

Might consider replacing jambalaya for a breakfast version with eggs cheese andouille topped with sharp cheddar n maple bacon, if i get some interest

Maybe a shrimp n cheese grits, or breakfast version with bacon or sausage

Ever thought of teaming up with the guys/company who set up tents, tables, Chairs, satellite, etc. for people? Maybe befriend that guy to help promote your catering as he sets up for customers. Of course, it's too late for next game but something to think about for the long run. Also, consider stopping by the different tents (especially ones where you can see they have lots of "resources") and offer free sample...they don't have to worry about cooking next time! Good luck.
