It’s so the opposing team can’t match the signals w the play on the field. It’s suppose to help from teams stealing signsTarps or some fabric or whatever are held up behind the guys on the sideline that are either making signals or holding up play cards. My guesses are it could be for added contrast to make it easier to see from the field or to shield the view from certain angles so cameras or opponents can't see. I've never heard a broadcaster or coach mention what they are for or even talk about them at all.
