I asked this in the spare rib thread, and I can’t seem to find a ton of what I’d consider experts recipes in this.
Peanut butter and jelly ribs. I thought I’ve seen someone on here make them and I’m dying to make a slab, but I want some personal opinion on them before I do it

I’ve never done them but a couple of the groups I’m in on Facebook have done it and for the most part they loved them. Definitely outside the box.

I've recommended them on here before. My process:

Normal 2-2-1 method (or 3-2-1 with spares).
-Apply normal rub and smoke like you normally would for the first segment (2 hrs)
-While that is cooking, go inside and get a pot and melt down 1 cup of jelly (I use strawberry preserves) and 1 cup smooth peanut butter. Add 1/2 teaspoon cayenne, and I usually add a couple teaspoons of some all-purpose BBQ seasoning (recently it's been XTC Rub from Jonesy Q). Stir constantly and add quick splashes of beer to get the consistency to that of a gravy, so that it's easy to paint on the ribs.
-When you go to wrap for the 2nd phase (roughly 2 hours in for baby backs/or when the meat starts to pull away from bone a tad)e, mop on heavy amount of the glaze, wrap, and cook for another 1.5 - 2 hrs.
-Unwrap, go back on for another 0.5 - 1 hr and glaze it again with your glaze.

They are awesome.
