OT: brisket cook

Picked up a brisket from Costco yesterday and decided to smoke it. I did my normal routine but added a much longer rest on the end. I found this guy on YouTube called Chud’s BBQ (got a lot of good videos if you wanna check him out) and he does a long rest by putting the brisket in the oven at the lowest setting (mine was 170) overnight.

I’ll admit it sucks to cook a brisket all day just to not be able to eat it until the next day but I really liked it. I’ll probably do this again in the future.

Brisket is the hardest and most time intensive of the smoked meats. What temp was the brisket when you put it in the oven? Wrapped or unwrapped?

I took it off the grill just above 200… it was wrapped in butcher paper. I left it wrapped while in the oven. I did put it on a pan and put a rack in the pan to lift the brisket up.

I’ll have to give that a try. I’ve rested them in a cooler for up to six hours and they are still hot.
