I just pulled off a shoulder that I rubbed with a nice Bourbon rub, let sit in the fridge for 8 hours, put on the smoker last night at 11:30, woke up at 7 on a Saturday to wrap in foil, and then waited for it to hit 202. I brought it in the house and put it in the cold oven to rest and the next thing you know I hear the oven open and my wife says I am ready to taste it. I rushed into the kitchen and told her to STOP! No matter how much I explained to her how it has to rest, she is still upset at me.

Ya gotta just love 'em.

Cooked one for Memorial Day and let it rest until I could pull it without burning my fingers off. The wife was glad we waited. Said it was the best I had cooked. Patience is key to good slow cooked smoked foods especially once they hit temp and you get anxious to start tearing into the meat. Just calm down and let it rest

My wife’s birthday is tomorrow, and I just got back from picking up the steaks to do individual beef Wellingtons. Let me tell you how much I can’t wait to hear my MiL tell me tomorrow to please make sure that I cook ALL the pink out of hers because anything else is “rare” in her eyes

My wife’s birthday is tomorrow, and I just got back from picking up the steaks to do individual beef Wellingtons. Let me tell you how much I can’t wait to hear my MiL tell me tomorrow to please make sure that I cook ALL the pink out of hers because anything else is “rare” in her eyes

My wife does the same thing. And she will go ahead and eat it early. She has a very short fuse when it comes to time-to-eat. She's not fat or anything, she just gets grumpy as hell if she has to wait once she's hungry.

I can't stand the bitching & whining about it, so I just shake my head and let her have it. On me to get it ready before what she considers supper-time, and not be 20 minutes late!

I like to rest a pork butt until it gets back down to 195 or so, then hold for at least 3-4 hours. I don't do a lot of briskets but I'd want to go at least 5 hours there. Those big bbq cuts improve so much with a good long rest/hold.

I just kept serving medium-rare to my wife/MIL despite what they asked for. Told them they could nuke it if it was too undercooked for them. They finally quit the extra hassle and just ate it. Didn't break the MIL until Christmas dinner with a rib roast some years back.

I just turn the smoker off and leave it wrapped on there for a few hours - otherwise it ends in ripped foil pinched butt chaos every time. I still got kids in the house.

Yes. We ran some errands and when we got back It was perfect, even according to my wife. So I believe she learned something today.
