I'm going to try to boil 20 lbs of crawfish tonight and I need a good recipe. I figured I would try a small amount my first time, so I would be ready for a bigger boil in a few weeks. Every time I've done it, it's been with a couple of people that new what they were doing and I haven't seen any online recipes that look familiar. Can anyone give me some suggestions that might be easy for my first time?

I'm looking for something with a little spice, but not over the top.

Thanks in advance

I mix up salt, pepper, garlic andcayennepepper ( to taste) and pour it in with your crawfish, then I go heavy on the shrimp broil, I use both bags and the liquid. You can buy the hot shrimp boil as well which well help you with your spice. I cut up lemons, onions, corn and potatoes. You will want to be sure your potatoes and corn are done or close to it before you drop the crawfish.

It's not as hot as it sounds.

Boil your corn, taters, halved onions, lemons, whole garlic, sausage in the seasoned boil first. When the taters are almost done drop in mushrooms and any other veggies and cook until done. Toss that into a prewarmed cooler. Bring it back to a rolling boil and drop the bugs. When the bugs are done dump them in the cooler with the other fixings.

Be sure to use a ton of margarine in the boil. Popcorn butter works great.

Have fun.

Title: Boiled Crawfish -- Justin Wilson
Categories: Cajun, Fish/sea, Sausages
Yield: 10 servings

4 ea Boxes salt (no size mentione 1 x Garlic
6 ea Pouches crab boil 24 ea Small potatoes
9 ea Lemons 1 x Smoked sausage
8 oz Cayenne pepper 1 x Corn
5 lb Small white onions 50 lb Live crawfish

Bring seasonings to boil for 10 minutes. Add potatoes, corn,
and smoked sausage. Boil for another 10 minutes. Add crawfish.
Bring back to boil. Cut fire off immediately. Let soak for
20 to 30 minutes. Drain. Peel and eat.
While water is coming to a boil, cull and clean crawfish.
Rinse well with garden hose and remove any dead ones.
Always wear gloves when you fool with crawfish, but remember,
they can still pinch you through gloves.
Justin Wilson writes, “Not everybody likes the fat, but I do, and
I love to dig my finger into the head and scoop it out. During
crawfish season, my finger stays yellow from one end to the other.”
From Justin Wilson’s “Outdoor Cooking With Inside Help.” I always add a stick of butter(to help them pop out of the shell), use Chinese red pepper instead of Cayenne(the crawfish hut has it) ,and I use a bottle of Crystal Hot sauce. It takes time to get the perfect mix, but this should get you going. The crawfish Hut also sells some good seasing mixes(Swamp Fire) better than Kroger has. Zatarain's makes a spicy mix that is good, and there are several more out there.. Have Fun.. Swamp Fire is the way to go. Being from Baton Rouge, my entire family swears by that blend. Just hosted my 4th boil since in the last 3 years here yesterday, and while my recipe is definitely different from all listed here, you can't go wrong using Swamp Fire as you base...

I may have gone a little strong on the spices, because they were pretty damn spicy, but other than that they were perfect. I think the last time I had tried it with a few buddies they used the liquid boil....this time I went with the powder and it made a big difference.

Thanks again.

Can I get the swamp fire seasoning and chinese pepper in Tupelo? If not, what is my next best option on seasoning?
Also when I clean the crawfish, am I supposed to clean them in salt water? Seems like I heard that somewhere before.

And on the gatorade subject from another post. I agree that Citrus Cooler is the best but it seems like I haven't seen that flavor since I was in high school. Do they still make it?
