OT......Ribs

smoking some baby backs on my Traeger with apple wood tonight, wife is making some homemade twice baked potatoes. Putting on some barbecue beans with onions in the smoker an hour before the ribs are done, gonna finish with some sourdough bread with garlic butter....... after all that no room for dessert!!!!! Probably the last cool night till November! What’s for dinner tonight Sooners...........

I am having Rare Roast Beef Roll-Ups...I use the Boar's Head Prime Rib, Sandwich Sliced, then add a slice of Horseradish Cheddar, Sweet 'n' Sour Cole Slaw, and Oklahoma Caviar, (That Black-Eyed Pea/Jalapeno Mix of Veggies.) I say that, to say this...If you like Horseradish, and haven't tried the Cheese, it's your loss! It 'Awakens' the simplest of sammiches! Do yourself a favor and try it, along with a Frozen Mug of the Brewski of your choice! :rolleyes::eek::p

We made some Organic Tacos.

Organic taco shells Organic tomatoes, Organic kidney beans, Organic lettace, fried Vegetarian beef crumbles with Organic garlic, diced Organic avacados, diced onions, and cover the tacos with delicious Pace Organic Salsa. Diced Cheese is optional.

I ate three tacos with homemade Lemonade mixed with freshly squeezed orange juice.

Delicious!

pssooner have you ever had trouble with your Traeger ? I've got a Big tex and I have trouble keeping the temp consistent and have never gotten the thing as hot as I wish. It's an ok product but mine has to be monitored LOTS during the cooking process... I was 'surprised' by the wife with the birthday gift and would have rather had a green egg...

I wasn’t very patient when getting it fired up, I didn’t let it get started good and the pellets would flood the smoke box and the temperature would drop because the fire would go out! I talked to a friend who has one and he told me to just follow there directions to a T and I wouldn’t have a problem! Been doing that for over a year and nothing but great food, if you get one follow the directions! As far as monitoring, just add pellets every two or three hours and don’t open the lid! :)

I’ve got a good recipe for baby back ribs if you don’t have a smoker. Bake ribs in your oven for 2 hours at about 250 degrees, then fire up your outside grill and roast the ribs for about 30 minutes, turning several times, baste with bbq sauce until carmelized. The meat will be falling off the bone tender.

Love the Hideaway Big Country pie. One of many things I miss about living in Tulsa.
ya know what kc..i like the extreme, dig the cimarron, but LOVE the big country. canadian bacon AND cheddar cheese together? forget about it! recommend it to anyone. great call.
