Italian. Went to Binion's steakhouse dowtown, the food was good, not great, but the"Old Vegas"atmosphere was really cool - the waiter had some good stories too. You can find better steaks, though. Maybe go there for a drink, since you'll be downtown anyway.
The coolest place we ate was at a bistro called Japonais (I think) at the Mirage. It's kind of a tapas place (don't expect a big filling meal, maybe just stop in for appetizers), but go there and get "the rock". It's a plate of thinly sliced and marinated (butraw)strips of steak, with chopsticks. They also bring you a big rock, that is heated to several hundred degrees. You take the steak andcook it on the rock for a few seconds, flip it, then eat it. It was incredible, and a really cool idea. If you can bring it to your restaurant, let me know - I'll definitely stop by.
