They way we do them, yes, the shell is still on. The crack in the shell allows all the spice to be pretty much suctioned into it.
While still somewhat on subject how long do y'all boil em and how many lbs per person. For some reason I'm thinking 4.5 lbs per person and 12 min per batch.
