When photographing ice cream, professional food photographers use mashed potatoes. You can almost tell in this picture.

I know because one day, I was at a professional food shoot, the guy I was with said dig in when they were done shooting the cake ala mode with chocolate syrup. Chocolate syrup+ mashed potatoes = suck.
