Proud to bring back JesterB with the recipe of the week. This week is a dead-gum good Cowboy Casserole. Go STATE! GTHOSU!
Ingredients:Ingredients 8 chicken drumsticks, skin removed
Remember to remove outer layer....
8 ounces lowfat sliced smoked sausage,
2 cans (16-ounces) barbecued baked beans
1 can (15-ounces) whole kernel corn
Finally:
1 can (15-ounces) black beans, rinsed and drained
1 3/4 cups frozen baby lima beans, thawed
1 1/2 cups chopped onions
1 can (8-ounces) tomato sauce
1 1/2 cups broken corn tortilla chips, crushed
Mix all of the ingredients except corn chips in baking dish.
keep mixing....
Preheat oven to 375 degrees F. Have a shallow 3-quart baking dish ready. Cover and bake 1 hour. Uncover, sprinkle with chips and bake, uncovered, 15 minutes longer or until the chicken is cooked through.
While baking for hour prepare yourself for the game. Tell / Ask the women of the house to ready your beverages. Pregame.....

And tell her to prepare herself for a little game I like to call "tame the Cowgirls" GO STATE!
