In honor of the hokies, wahhoo's, cleveland Cavaliers or whatever they call themselves, Todays TGIF will feature a very special and fantastic smoked chicken recipie. So fire up the smoker, grab a cold one and cheer the Bulldogs all the way to OMAHA! Go STATE! Go STATE!
First you need to make a brine:

- 2 tea bags ( i prefer Luzianne)

- 2 Bay leaves
- 1/2 cup firmly packed brown sugar
- 1/4 cup sea salt or kosher salt
- 1 small yellow onion sliced thin
- 1 lemon, thinly sliced
- 4 garlic cloves, crushed
- 2 fresh rosemary sprigs
- 1 tablespoon freshly cracked pepper
- 2 cups ice cubes
- 4lbs of chicken leg quarters or Thunder Thighs
Now lets make some Brine:
- 1. Bring 4 cups water to a boil in a 3-qt. saucepan; add tea bags. Remove from fire, cover and steep for 10 minutes.
- 2. Discard tea bags. Unless they look anything like this:

- Stir in everything but ice and chicken. Keep stirring until sugar dissolves. Cool completely (about 45 minutes); stir in ice. The brine needs to be cold before you add the chicken.
- 3. Place tea mixture and chicken in a large zip-top plastic freezer bag; seal. Place bag in a shallow baking dish and chill 24 hours. Remove chicken from marinade, discarding marinade; pat chicken dry with paper towels. At this point you should have some fantastic looking thighs.
- Now lets fire up the smoker:
Bring your smoker to 250* to 275* with pecan, oak or hickory. While the smoker is coming to temp, brush or rub the thunder thighs with oil
and apply a liberal amount of sea salt and course ground black pepper (Obama liberal not Lumumba liberal). Put the legs on the smoker until done (about 4 hours) reapplying oil half way through.
During this time have another beer and prepare the white sauce.
White sauce:
2 cups Duke's mayo. Seriously. Duke's!
1 cup of apple cider vinegar
2 tablespoons of white vinegar
3 tablespoons of dry rub
Combine all ingredients and blend till smooth.
Finally Enjoy!
Now sit back, unbutton your shirt....
and prepare to watch the Dawgs kick some...
