Sorry for the hiatus last weekend as the Seinfeld family basically treated Vandy as an off week, but thanks to mcdawg and the rest of the crew for keeping things rolling. Here's the updated schedule:

LA Tech - Anything goes (Winner - klc90)
NC State - Anything goes (Winner - PBRME)
Memphis - Pulled pork and/or ribs (Winner - mcdawg22)
LSU - Cajun (Winner - MerdianDog)
A&M - Beef (Winner - JoeLee'sSocks)
Bama - Anything goes (Winner - MeridianDog)
Vandy - Anything goes (Winner - mcdawg22)
Kentucky - Chicken, bourbon
Arkansas - Pork
Auburn - Seafood
TN State - Anything goes
OM - No contest (Thanksgiving)

Now this weeks sounds pretty simple, but bear in mind that voters need to be paying special attention to the drinking portion of the contest this weekend. It's Kentucky week, so let's show these Lexington boys that we know how to find good bourbon in our neck of the woods too. And just to piss them off more, it doesn't HAVE to be Kentucky bourbon. We'll allow any form of whiskey this week.

I look forward to see what y'all are doing this weekend, and if you get a chance, pour one out for our lifetime legend of a Dawg, JLD. Let's skin these cats tomorrow night

I'll be in Vegas all day Saturday, but Sunday I'm going to make a big batch of Chicken Chili and enjoy with a side of garlic toast and some Elijah Craig over a couple of blocks of ice.

Love some Elijah Craig. I'll be in Starkville Saturday for the first time in a couple years, but definitely plan on packing some bourbon. Probably something a little higher proof, but not hard to find. Probably will go with some Rare Breed.

No chicken for us so I can’t win, but:

I bought 20# of shrimp this morning from a boat at the ocean springs harbor. Got the sausage, seasonings, and veggies prepped for the shrimp boil I’m doing at our tailgate tomorrow.

Working out of town tomorrow and I can't cook chicken for **** anyway. So I'm going to sit out the cooking part, but I will make it home in time for the game and I have a new bottle of Booker's calling my name.

I'm in for a Spatchcock Chicken. It's already soaking in an Apple Juice and Apple Vinegar Brine with Salt, Brown Sugar, and Meat Church Voodoo seasoning.

Of course, I am kidding. I’ll find something interesting at the liquor store tomorrow. Halloween takes precedence in the cul de sac with me doing a tenderloin for the neighbors while my neighbor serves hot dogs to the kids, but I can put that on Sunday so Saturday has been freed up.

I wasn’t planning on doing poultry but I was throwing away my daughter’s uncrustables, and forgot about a chicken breast that I had in the freezer. So I am brining it overnight and plan on rubbing some Mediterranean spices on it, then smoking it. I’m pretty drunk so I’ll let you know what direction I take it after that.

If you're looking for a traditional high proof bourbon fairly priced, I'm finding Early Times bottled in bond at a few places now for less than $25 for a full liter. That stuff makes a great hot toddy or mint Julip, which is what I'm serving tomorrow.

Is that your first dry fly? It's different in a good way. It's like a a wheated bourbon and rye mixed together.

Nice. I thought they were in Oregon. I haven't seen it at my store since I moved. But I am driving by one that has it in stock so I may go snag on today. I haven't had the wheat whiskey, not sure I would like a single grain wheat 20-30% in a wheated bourbon is nice though.

Do you know if they are going to start aging longer? If they take that bourbon to the 6-8 year range in a barrel strength it will be an all timer.

I've talked with them a little bit, and I think they are. They just moved into this new space like 3 months ago, and they're still getting things up and running there, but it's pretty legit. They're having a soft open of their kitchen on Monday, and I'm probably going to check it out.

The bourbon I picked up last night was aged 3, but I know they have at least 4 year. I actually like their wheat, and that's what I get most often. I've had glasses of their caledonian and hibernian before, but I picked up a bottle of the caledonian last night, which is aged 5. A lot of people like the triticale, which is like 51% rye, and I get that for sazeracs

Looking for comfort tonight and at our house, if chicken is involved, comfort means Chicken Pot Pie.

This recipe serves 2

Need:

1 package (12 ounces) frozen mixed vegetables (store brand)
1 (14 ounce) can chicken broth
1 (12.5 ounce) can chicken breast meat
4 Tablespoons unsalted butter
2 Tablespoons AP flour
1/8 teaspoon black pepper
1/4 teaspoon Thyme
1 ready-made pie crust
3 Tablespoons Celery, chopped
2 Green Onions – diced
1 whipped egg to wash crust before baking

Directions:

Cook vegetables for 3 minutes in Microwave with 2 Tablespoons butter. They should be 3/4 cooked. Then add the chicken. This is simple food for simple folks. I used canned chicken.

Make a blond roux with 2 Tablespoons of butter, 2 Tablespoons of AP flour and 1/8 teaspoon black pepper. When the roux has cooked (medium heat for 2 minutes), add the chicken broth, celery, green onions and thyme. Cook over low heat until a creamy sauce is formed.

Add the vegetables and chicken. When the sauce thickens, add everything to a casserole dish and trim the crust to cover the top + 1/4 inch overhang. There will be crust trimmings left over when the top crust is cut to shape. Shape these trimmings into 1 inch cigarette shaped pieces and add these dough pieces to the mixture in the bowl.

Fit the crust in place and roll the edges slightly. Use a sharp knife to cut three or four 2 inch slits in the top of the crust and then brush it with a whipped egg wash.

Bake on the middle shelf of a preheated 350 degree oven for 40 minutes. Allow the pie to cool for 10 minutes before serving.

The preferred bourbon of one of my very best friends and I drink it in his honor and as a memory of our friendship (seemingly, all of my good friends die on me before their time). Smooth and good flavor. Goes down so easily, I can drink it all day long as long as I don't need to stand or walk after the first hour or two.
