Weekend Grillin’ and Smokin’ thread

What are you putting on the grill or smoker this weekend? I’m going to start with grilled shrimp for lunch tomorrow and maybe steaks for Sunday afternoon.

Smoking a brisket for a friend overnight tonight. Simple 17 pound prime already trimmed and seasoned. I actually will not get to eat any of it as I am coming to the game tomorrow. My buddy is an LSU guy, and wanted it for their game tomorrow.
Ummmm, can we be friends? I'm over 200lbs and love brisket

I've been doing salmon burnt-ends the last couple of weeks and they are fire. Get a piece of fatty salmon like Scottish or Norwegian and cut it into cubes, soak it in Scotch for a day, then a salt-based cure for a day, then air dry to form the pellicle coating, then I smoke them at 225 for about 2 hours, put on a Guinness-based glaze and turn up the heat to caramelize it. Every time I make these things we win.

Just bought a pork belly and beef short ribs. Fire up the egg in the morning and see how the day goes. 12 pack of Victoria’s to wash it down with.

Ummmm, can we be friends? I'm over 200lbs and love brisket
He is playing for it and all. I almost made fun of the guy, but he is a fellow coach. I kind of felt weird having another man coming to me, and asking me to cook a brisket for him. I mean I get his reasoning I cook quite a few over the course of the year, and this would have been his first one ever so I guess I get it. I am well over three hundred pounds (320) at six foot three.

I too am short for my weight. It’s a genetic defect.

but hey......he came to you with humility and being open that he was not ready to do it on his own.....I can't knock him for that

Ohhhhh so close. Brisket is reserved for the under 200 crowd!
let me just be very frank.......there is a large segment of the population, and I do mean LARGE.....that disagrees with your skinny weight suggestion

He’s a super nice guy, and a really smart coach. He told me he me wanted to come show him how to cook one when I had a chance. He was honest about not wanting to make a 150 dollar mistake. I am not going to front I was nervous the first few times I cooked one. After several years and probably a hundred briskets by now I just have a process I stick to.

Brisket is my Achilles heel when I comes to smoking meat. I haven’t found my can’t miss method. I can cook several in a row that are perfect and then cook one the same way and it’s embarrassing.

if you don't mind.....send me your "process"......I cook other things, but it may be time i tackle a brisket

Best damn chili you'd ever have and grilled cheese samiches but not on the grill...too damn hot outside.
