Beef jerky making question

Noob here.

Several jerky makers on amazon come with a jerky gun. What does one do with a jerky gun?

It is for you to be able to extrude a thin flat layer using ground beef(chuck, etc).. Not nearly as good as length wide cut eye of round...

When I was still married, the father-in-law was a major bambi-slayer.

I made copious quantities of venison jerky by just slicing thin strips, marinating/seasoning it, and using my food drier/electrical dehydrator appliance thangie.
Worked well; much better than store-bought jerky.

The texture is all wrong. It does work for those who don't like chewing a lot on jerky though.

The most important things are: quality of meat, seasoning, thickness, and time in the dehydrator. The last two go hand in hand of course.

Save your time with the gun. It works in a pinch but only then. Get some of your tenderized deer steaks(or roast), slice them thin, marinate and dehydrate. Mucho better and actually has beef jerky texture. The gun turns what was formally goo into dehydrated goo.

If you have ever bought cheap beef jerky from the store, not the big name stuff that is usually expensive but the cheap stuff cause you like jerky and you wanted to save a few bucks. That is usually made from ground beef and it doesn't taste the same as the good stuff a lot softer, but that chewiness is what makes jerky </p>

Put the eye of round in the freezer for about an hour before you slice it. It makes it easier to cut it into thin slices. Also, if you don't have a dehydrator you can still make jerky. Just prepare it as normal then stick it in the oven on it's lowest setting and crack the oven door open with a fork or something similar.
