My list is where the cover is the better version.

All Along the Watchtower already mentioned.

Move it on Over by George Thorogood.

Blinded by the Light by Manfred Mann.

Fire by the Pointer Sisters.

With a Little Help From My Friends and She Came in Through the Bathroom Window by Joe Cocker.

One that is closer than the others is Garth Brooks version of Shameless is better than Billy Joel's.

And anyone's version of Hallelujah is better than Leonard Cohen's.
Now that you mention Joe Cocker, how bout this gem? (saw Leon Russell at the Hump late 70's)

Sorry, was just trying to get y’all’s juices flowing. I’m a die hard Allman Bros fan… so Zac Williams … Midnight Rider is legendary. Tell me y’all’s fav!! Could have said Stevie Nicks doing Dave Matthew’s but that girl can sing anything!
Cowboy Junkies cover of Lou Reed's 'Sweet Jane' is my favorite.

If you remember a Canadian band called Big Wreck that had a few minutes of success in the US in the summer of 1998, they did a cover of Shout by Tears For Fears that's fantastic:

Bruce mentioned this one, but it's also my favorite and I think the live version at Woodstock where Joe Cocker is doing his most classic Joe Cocker spazz out is the best.

I just thought of one more. This one is fantastic. Been in a few movies plus Scrubs I'm pretty sure. Scrubs had great music.
