Tonight: wild rice, snap beans, peppered field peas, sliced ham, unsweetened ice tea, and muddy buddies.

I am ADDICTED to muddy buddies. I start eating them and can't stop. If you've never had any the recipe is on the back of the Rice Chex cereal box. I use the colored red and green Rice Chex for Xmas and don't use peanut butter or chocolate. Just pain for me with butter and powdered sugar. . My wife likes the chocolate in hers. You can fix them many different ways.

I was going easy tonight. Supposed to have beef stew over yellow rice but I opened a can of chicken and dumplings by mistake so its chicken and dumplings and yellow rice. Not a good combination but it will do for tonight. lol

Turkey, stuffing with gravy, baked spicy ham, rolls, butter beans, corn, boiled potatoes, diet Pepsi, and a horde of desserts. It was my wife's family Xmas dinner. Many other foods I did not try as I didn't have room in my belly for them.

Spatchcocked and grilled a chicken with roasted potatoes. The leftover meat will make chicken salad. The carcas will go into the instant pot tomorrow with celery, onion, carrots, and some herbs for stock.

Making a huge pot of vegetable soup to carry us for a few days. All the parties and family get togethers are over. Just me and my wife for 2 days. She's picked up a respiratory thing and now I feel it coming into me. smdh She works at the hospital but got it from her sick *** relatives at a party Saturday. All of them coughing and sneezing everywhere. So the soup will be good for 2 days. I'll get in their later and start adding my various types of meat to it.

I’m late revisiting this thread. My Dad (77) loves Oyster Stew. My grandmother (mom’s side) used to make it at the holidays and my Dad loved her recipe. Well, Mom passed away 3 1/2 years ago (**** Cancer) and my grandmother passed away last year at the age of 96

My Dad has been saying for a couple of months “I wish I had some homemade oyster stew.”

So I started looking for recipes and found one that sounded and looked like my grandma’s recipe

Christmas Day he’s outside milling around for a while so I got my ingredients I had hid in his fridge and went to putting it together

It looked like my grandma’s oyster stew

It smelled just like my grandma’s oyster stew

Dad comes back in the house, smells it immediately, and grabs a bowl faster than a kid at Christmas with his presents

He tries it, he smiles

I try it, I smile

It was even better than my grandma’s recipe

I go to visit him / spend the day every Saturday. I’ll be making another pot in a week or two

My Dad declared this “the best Christmas since Mom passed”

Last night canned chili on toast topped with white shoe peg corn and grated cheddar cheese and unsweetened iced tea and a few pieces of Whitman's Sampler candy. I was lazy.

Visiting my dad for New Years. He pulled some fresh turnip greens, made cornbread, and fried up some bacon since he didn’t have hog jowls. Luckily for me, given that I hate black eyed peas…he didn’t have any of them either. But he found an old can of pork and beans in the cupboard and said “we’ll make do with this.”

Do you mind sharing your recipe? i love oyster stew as well and would love to try a good one!
This was a super easy “N.C. mountain recipe” I found online

it was basically just equal number of cans of evaporated milk along with using the same number of empty cans for whole milk and water. I made it with 3 cans each and put a half stick of butter in the pot

While heating the stew, pour your oysters and oyster juice along with most of the rest of the stick of butter in a sauce pan / frying pan on medium heat for 3-5 minutes (until the oysters start to curl on the edges). Recipe said 2 pints, I used 3. Pour over oysters and oyster juice into the big pot. I added paprika, old bay, and pepper to season while heating up. The recipe called for the full stick of butter but that’s just seemed a bit much

Bring soup to a boil and then cover/set off of heat to “rest” for 30 minutes. After 30 minutes put back on heat to simmer. Ready to eat when its hot. And you can let it simmer for hours after if you want. Just give it a good stir every now and then

You can add stuff like celery or shallots, etc if you want. I didn’t have any and my grandmothers recipe was “plain” so that’s the way I wanted it anyway. It had a great oyster flavor to it when done. It was rich as well but when you’re having soup in the winter, that’s the comfort food level you’re looking for

Was super easy to make and again…was delicious

Tonight after the basketball game will be fried chicken, BBQ pork, baked beans, slaw, potato salad, cabbage, black eyed peas, baked potatoes, hush puppies, iced teas, vanilla ice cream.

Fried up some corn beef hash in the skillet and added some Texas Pete, field peas, lima beans, unsweetened iced tea, white fudge covered Oreos.

Right now for tonight I'm planning on chicken chow mein over white rice with soy sauce and chow mein crispy noodles, unsweetened iced tea, and 2 Hershey miniatures.
