she's a ***** who was cheating on her fiance with a married man and costing the University what one of the 10 best coaches in college football. There would have been risks to the university it it went to trial, but unless she had ironclad proof of a quid pro quo threats that arose after her employment, she most likely would have just further drug her name through the mud and gone through a trial that depending on the strategy of UArk, could have lasted multiple years. All the while she would be toxic to any other employer, because it's generally a bad idea to hire employees that like to screw around with married men and then sue their employer when things get bad.
As it is, she certainly doesn't come off well, and probably is going to have to spend some time doing **** jobs while this blows over, but at least after a few years of staying out of the spotlight, she can blame this incident on being young and stupid, and not have to also explain why she thought it was a good idea to try to extort her employer.
