Smoked meatloaf is so good.I've had a craving for smoked meatloaf so I'm going this afternoon and buy a 5# chub of ground chuck and put several together and freeze some. Doesn't cost any more electricity or smoke to do multiple ones so may as well.
Also found out awhile back that those big Stouffers Frozen Mac n Cheese sides are darn good after you smoke them for 3-4 hours, stirring often to get smoke flavor on all of it. Thaw it first and then just slide it in the smoker uncovered and stir occasionally. Bacon bits and jalapenos are good stirred into it too

Okay you just blew my mind. Please try it and let us know if it works, and if it in any way resemble the smoked Old Fashioned that I can get at finer establishments around here... After much trial and error I think I've finally mastered cajun boiled peanuts in the crock pot so I'll probably make a batch of those.

The only way I eat bologna is BBQ'd and I love it. I'll pass on the spam. My dad loves fried bologna but the smell of that cooking makes me nauseous.![]()
But for real, never heard of smoked bologna. And this is coming from a guy who's grandmother thought a well balanced breakfast called for fried spam.
Yeah I thaw it out first, then add maybe bacon bits, jalapenos, shrimp, Rotel, broccoli, or your favorites, then finish with bread or cracker crumbs and some additional cheddar or pepper jack.Smoked meatloaf is so good.
I'd never thought about doing smoked mac n cheese that way but sounds extremely good. Do you defrost it or anything first? My only concern with putting it in there straight from the freezer is it would lower my temps in the pit too much.

Man I do them all the time, go to deli and buy a chub as large as you want. Score it on the outside so smoke can get in, slop mustard all over it, coat with your favorite rub and put it on smoker, the longer the better. If I don't have enough time I'll cut a chub of it into cubes and do the mustard and rub on the cubes, still tastes great but cooks much quicker, burnt bologna ends![]()

A bag of raw peanuts, wash them and throw in crockpot. 1 bag/pouch of the zatarains crawfish, shrimp and crab boil, and about half of a 16oz bag of any other kind of shrimp & crab boil seasoning that's got a high salt content. I put in some red pepper flakes and crushed jalapeño pepper flakes too. I end up cooking them for about 24 hours give or take, could be more or less depending on temp. I pull them when they're the right texture. Add seasoning as you see necessary. I found it takes way more seasoning than I originally thought, you're essentially cooking them in a heavily seasoned brine. Eat them hot or let cool and refrigerate for later.Curious on the boiled peanuts; recipe? Sound great!

Boil eggs for 8 min then put in ice bath so they stop cooking. Peel, then place on the smoker at 250 for 15 min. Boom, that's it. Make whatever filling you desire and enjoyElaborate on the smoked devil eggs please.
