I'm going to smoke a pork butt, 10lb of wings, a slab or 2 of baby backs, and a couple blocks of cream cheese.

What's on yall's menu?

Oldest graduates HS tomorrow.
We are cooking a bunch for an extended family lunch, but it's for tomorrow vs Monday.

Grad chose the menu.

Smoking 16# of pork for some pulled pork today.
Homemade buns
Homemade apple slaw.
Pesto pasta salad.
Cherry pie.
Some other dessert I can't remember and struggle to pronounce.

I've had a craving for smoked meatloaf so I'm going this afternoon and buy a 5# chub of ground chuck and put several together and freeze some. Doesn't cost any more electricity or smoke to do multiple ones so may as well.

Also found out awhile back that those big Stouffers Frozen Mac n Cheese sides are darn good after you smoke them for 3-4 hours, stirring often to get smoke flavor on all of it. Thaw it first and then just slide it in the smoker uncovered and stir occasionally. Bacon bits and jalapenos are good stirred into it too

I'd never thought about doing smoked mac n cheese that way but sounds extremely good. Do you defrost it or anything first? My only concern with putting it in there straight from the freezer is it would lower my temps in the pit too much.

Another outside of the box idea I've been wanting to try is smoked ice. Put some water on the smoker then pour it in ice molds and freeze. Use with bourbon/scotch/old fashioned etc.

Okay you just blew my mind. Please try it and let us know if it works, and if it in any way resemble the smoked Old Fashioned that I can get at finer establishments around here... The refined and hoity toity drinkers on the board need to know.

Every time I put water on the smoker the coals go out. Please advise.

grilling some deer poppers: cut jalapeno and peppercino(for those who cant handle jalapenos) peppers in half, clean and wash. fill with mix of cheddar and cream cheese. put a piece of marinated tenderized deer steak on it and wrap in bacon.

marinated wings.
some deer sausage,
some duck breasts,
and a couple slabs of ribs. each cut in half and done with different sauces'
Wife is making homemade cole slaw, deviled eggs and mac and cheese.

The only way I eat bologna is BBQ'd and I love it. I'll pass on the spam. My dad loves fried bologna but the smell of that cooking makes me nauseous.

Yeah I thaw it out first, then add maybe bacon bits, jalapenos, shrimp, Rotel, broccoli, or your favorites, then finish with bread or cracker crumbs and some additional cheddar or pepper jack.

Years ago I smelled some steaks on a grill on the Friday of Memorial Day, when I was headed out to the beach (which I will never do again on this weekend). I was so damn jealous. So these days and forever, I grill ribeyes on today, at home.

Probably some shrimp too, and potatoes au gratin. And of course salad, vinegar based dressing with plenty of strawberries and feta. Maybe some brown sugar roasted pecans.

Man I do them all the time, go to deli and buy a chub as large as you want. Score it on the outside so smoke can get in, slop mustard all over it, coat with your favorite rub and put it on smoker, the longer the better. If I don't have enough time I'll cut a chub of it into cubes and do the mustard and rub on the cubes, still tastes great but cooks much quicker, burnt bologna ends

Curious on the boiled peanuts; recipe? Sound great!
A bag of raw peanuts, wash them and throw in crockpot. 1 bag/pouch of the zatarains crawfish, shrimp and crab boil, and about half of a 16oz bag of any other kind of shrimp & crab boil seasoning that's got a high salt content. I put in some red pepper flakes and crushed jalapeño pepper flakes too. I end up cooking them for about 24 hours give or take, could be more or less depending on temp. I pull them when they're the right texture. Add seasoning as you see necessary. I found it takes way more seasoning than I originally thought, you're essentially cooking them in a heavily seasoned brine. Eat them hot or let cool and refrigerate for later.

Local grocery store has a 30 lb box of wings for 23.99. Catch is that they’re frozen in one block I’ve got to thaw the entire 30 lbs, I don’t have that many friends.

The fact that the friends you do have only eat one wing each tells me that you don't know any SPS-ers. I'm betting the over on SPS-ers eating wings for snacks while waiting for the real food to finish is 12.

Low country boil with fresh Gulf of America shrimp and Conecuh sausage. And no, Country Pleasin is not better. Got family from Boston coming, along with friends from London. Going to show them true southern hospitality. What time do Dawgs play tomorrow?

It’s a Memphis thing - specifically at Central BBQ
It is good though.
Buy a half roll of bologna, rub some mustard on it, your favorite bbq rub and throw it on the smoker for a couple of hours.
