My Tabasco is separating ...

I have two 12 oz. bottles of Tabasco sauce, one in the bar the other in the kitchen. Both were purchased at the same time, but the one in the kitchen is separating while the other shows signs of separating, but not at nearly the pace of the one in the kitchen.

For example, if I shake up the bottle in the kitchen, signs of separation begin in an hour or so. A good shake with the other bottle will last a couple days.

Is there anything wrong with the stuff? BTW, I don't refrigerate Tabasco.

Tabasco is nothing more than pepper oil and a little bit of vinegar. Oil and vinegar will not stay immulsified without something else in it which Tabasco does not have. Yes, having it refrigerated will slow the seperation but it isn't necessary.


When I buy Tabasco (I'm a Frank's Red Hot man), I buy the smallest bottle available and don't know if I have ever noticed it seperating in a bad manner. I eat it almost every day at the work cafeteria and often at restaurants and will shake it everytime before use.

Could be semantics I suppose, but red pepper oil is not listed as an ingredient, but it does look like an oil kind of separation. I've just never noticed this before and the other bottle doesn't have the same characteristic.

They make tabasco by crushing tabasco peppers. The result is an oil just like if you crush olives.
