OT: Do you like your grits regular,

No instant grits, the quick grits are so much better and take less than 10 minutes. My favorite are the Primo's Restaurant style ones with milk and cream cheese. Add some bacon bits and occasionally a fried egg.
I think communists must have introduced sugar to grits and cornbread both to fatten Southerners up because that just ain't right. It worked though I guess

We make our own grits out of rice with a grist mill. I make them with just butter and salt and they are incredible.
Well you made me do some googling. You opened a whole can of beans with this one. I figured grits had to be corn and that is basically correct. Rice grits is also called middlins and got the moniker grits because it looks the same. So because of poor education, we have rice grits. Made me run down a rabbit hole into polenta and risotto. They are all porridge.

Wife is from Boston (technically Quincy, MA) and in true Yankee fashion she sugars her grits. It's an abomination.

I heard of this many years ago, and like you, I had to give it a try. But even with my strong sweet tooth, never again. Butter, salt, pepper and a little bit of jalapeno cheddar from the MAFES store is my go-to.
