I would pick a set of heads you like. then buy a seperate set of uncut shafts like the below link. KBS is about the best now, though I prefer project x. have someone cut the shafts down 1 or 2" longer than standard/adjust the lie angle for you. That way you get a consistent kickpoint for all of your shafts. I'm not a fan of extensions, but others may feel like they're fine. I think it changes the swing weight/kickpoint of the club. obviously, that's my opinion and it may not matter to you for enjoyablility. You can piece together wedges, putter, woods, and driver here and there.
I think everyone has preferences on brands. I'm a big believer in forged clubs because of the feedback/alignment, and teaching from learning. I think mizuno makes the best forged clubs in forgiving models/cavity backs. I'm a big fan of older pings (ISI, eye 2, eye 3) too if you go offset. Callaway's are usually really forgiving and have alot of distance. I don't know much about the new taylormade irons. If I were a learner I would pick mizuno mp-57's, 58's or something of the sort in the forgiving forged area. I have never had an iron that felt better than a mizuno coming off the sweet spot, but that is me. I have had almost everything. I have old school mizuno mp-32's, but I play a lot.
Go try some at a store with a lot of demo's. Get something you enjoy.
