chili with beans is an abomination, in Texas and everywhere else where logic applies. 95% serious, 5% joking. If you eat beans in chili it’s soup. I prefer venison, and a tomatillo base.

Eta: my mother puts beans in it, I have had several chats with her on this matter. She has not altered her chili recipe thus far.
Agree.

That Dan-Os 17er swears by beans. I don't know anything that gets better by adding beans.

My mother always made it with rice in the bottom of the bowl. Her parents lived through the depression & that's how they made it. I get it, to stretch the meal. I don't do that now, but sometimes I miss it.

Saltines &/or cornbread is a must.

OTT Chili. Over the top chili cooked on the egg. All the ingredients but the meat in a cast iron Dutch oven on the egg. A grate on top of the Dutch oven with a giant meatball consisting of 2/3 ground beef and 1/3 Italian sausage. Smoke until done and crumble meat into chili. Flavorful but can be greasy from the drippings. You can pull some of the grease off the top.

The whole beans/no beans thing amazes me. People that eat and like beans regularly, will starve themselves before they will eat beans with chili, I don't get it. I will take chili however somebody makes it unless they add cinnamon (like Cincinnati chili has or sugar). Crackers first for me, or cornbread or Fritos are ok in a pinch. Hot sauce depends on how spicy I make it. If for just me and Mrs. Peeper I make it spicy and it doesn't need hot sauce, if I'm making it for a mixed crowd then I will add my own hot sauce.
At a certain age, beans are dangerous. It might take days to get that gas out.

I suggest having your gall bladder removed. Nothing stays in you long enough to produce gas. There are side effects!

I’m like you. I don’t prefer white chili but I’ll eat it. Beans, no beans, Texas style, masa no masa, Hormel, I’ll eat it all. I tried a recipe with cinnamon one time, never again. That was a chili I did not finish. And yes, Skyline is disgusting.

When I chili the easy way and not dice my own vegetables, I use rotel instead of canned diced tomatoes.

Probiotic tablets. The package says 1/day but I do 2 or 3 a week and I'm golden, no gas. And, your TP bill goes way down, those logs just slide right on out leaving little to no 'residue'

It ain't chili unless you add habaneros. Otherwise, it is just a bland meat stew with beans.
