Around me, it's gone from 3.79 to 5.29 in less than 2 years for prime. $100 for an uncooked brisket kinda takes the fun out of it.Brisket is at the top of my list, but 17 the current prices.

I’ve tried using homemade tallow when wrapping. Seemed to mellow out the crust too much. It does. I did one two years ago for the 4th, but I haven't touched one since.
