OT: Rank your Hot Sauces ….

To me you really have three types of hot sauces.

** Cajun/Creole
Crystal
Louisiana
Pepper Palace Horseradish/Oyster sauce
Texas Pete
Tabasco

** Mexican
Valentino
Tapatio
El Yucatán
Cholula
these could be interchangeable- I like em all.

**Wing sauce
Franks Buffalo
Hooters Hot
Franks Red Hot
Texas Pete Hot Wings

I don’t usually make my own wings at home so this one is a little more difficult to rank but, … I’ll use Franks even on poppy seed chicken or scrambled eggs.
Trappey's Bull is a good all around hot sauce.

Tiger sauce and Texas Pete. In fridge always

Fridge? I've never refrigerated any of the hot sauces, there's enough vinegar in them (acetic acid 5%-8%) that they won't go bad. I don't think any of them I use even say to refrigerate. I just consulted AI (Artificial Idiot) and they are safe without refrigeration but it will prolong the color and flavor if you do. Mine don't last long enough to have to worry about that anyway

Louisiana and Tabasco are daily drivers. Some of the Dave's Insanity sauces are good without being miserably hot, but I don't keep them around unless someone gifted them to me. Cholula is solid. I likely couldn't tell a difference in the wing sauces if I was doing a blind taste test.
