OT: Salsa recipes

I know some of you are sitting on old family recipes, time to give them up. Want to make a few different for Christmas since it is at our house this year. Give me your best, please! I like a medium hot with a slightly thinner than tomato sauce salsa with the usual ingredients, but I know there are a lot of variances. Thanks.

If you live within 5 states of Omaha go to Jacobo's on 24th & L st and buy theirs. It's basically priced at the cost you'll spend to make yours, and it's probably the best I've ever had.

Go ahead and grab some fresh tamales as well if you want your guests to really enjoy themselves. Merry Christmas

28 oz can diced tomatoes
sweet onion chopped
1 tsp ground cumin
1 tsp sea salt
2 cloves of fresh garlic chopped
2 jalapeño peppers remove seeds from just one
one bunch of fresh cilantro

put all ingredients into a blender, blend but do not liquify

Add a squeeze of fresh lime, stir and enjoy

Put tomatoes, onions and jalapeño in a metal basket and pop in the smoker at low heat for a hour then use rrhusker recipe

We basically cater out Xmas to Jacobos. Now that Grandma has passed on, no one wants to put in the time to make what you can buy for a buck and a half.

I wish they would open a location in Lincoln

dice 6 roma tomatoes
dice 1 med white onion
dice 1 jalapeno pepper (leave seeds in)
or dice 2 serrano peppers (take seeds out)
Mix in bowl
Add fresh garlic, oregano, cilantro, & salt.
Add lime juice, then cover and refrigerate.
Should be ready in 1 hour.

this is not thin, but more of a pico de gallo

I have a mexican girl in my office that told me the secret to her salsa, which is awesome, is to boil the tomatoes and onions.

Not related, but anyone ever had the green salsa out of the drink machine at Cal Taco here in Omaha? Dear Lord that stuff is delicious.

This is a weird one, but it's easy and it works. Get a jar of 'Tostitos Chipotle Cantina Salsa'. When you get it, it is watery and chunky. So what I do is blend it for about 20 seconds. The consistency is exactly what you're looking for and it is delicious!!

Pico de Gallo



Great on chips, tacos, burritos, tostadas, etc..

Ingredients:
3 medium tomatoes – remove the seeds / juice and then diced (see below)
3 medium jalapeños– remove the seeds and core and then diced (This is a mild version. Increase if more heat is desired)
1/4 red onion – diced.
1/4 yellow onion – diced.
2 or 3 green onion – diced.
1/2 bunch of cilantro – diced.
Juice of one lime. Can substitute a small lemon if you don’t have lime.





Place all the diced ingredients in a large bowl and mix thoroughly. I juice the lime over everything and stir.

Roasted Tomatillo Pasilla Salsa



Ingredients:

3 pasilla peppers – rehydrate and then remove the seeds and as much skin as you can

1 lb. tomatillos – Approximately 9 to 10 medium sized

3 medium jalapeños– remove the seeds and core and then diced (This is a mild version. Increase if more heat is desired)

1/2 red onion – quarter with root ball intact to hold it together.

8 cloves of garlic

1 bunch of cilantro

Juice of one lime. Can substitute a small lemon if you don’t have lime.

Rehydrate the pasillas and then remove the seeds and as much skin as you can. Then place them in a blender.









Roast everything except the cilantro and lime.



You want a nice char on the tomatillos and the jalapeños.



Now skin and seed the jalapeños and put in the blender.









Squeeze in the juice of the lime and blend.

Surprisingly enough, the Walmart 'Great Value Cantina Salsa' is actually the best store bought salsa I've had.

Many moons ago I managed to get the recipe for a different style of salsa that I've come across in a few mom & pop Mexican restaurants around the country, that were run by Mexican transplants.
What makes it unique is it's smooth instead of chunky texture.

1lb Hunts tomato sauce
1 chopped green onion
2Tbsp diced jalapeno
2oz diced roasted green chiles
1/4tsp garlic powder
1/4tsp sugar
1/2tsp salt
1/4tsp ground black pepper

Let sit overnight in the fridge before serving.
